On atteint la perfection! <\/p><cite>ndlr<\/cite><\/blockquote>\n\n\n\n<p>Cuisson 50 min , moule ou po\u00eale \u00e0 manche amovible, ou \u00e0 poign\u00e9e double.<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients<\/strong><\/p>\n\n\n\n<ul><li>p\u00e2te bris\u00e9e<\/li><li>1300g pommes<\/li><li>100 g sucre cassonade (2 X 50g)<\/li><li>100g beurre sal\u00e9 (2x50g)<\/li><li>une cuill\u00e8re \u00e0 soupe d&rsquo;eau<\/li><li>cannelle<\/li><\/ul>\n\n\n\n<p><strong>Pr\u00e9paration<\/strong><\/p>\n\n\n\n<p>\u00c9plucher et couper les pommes en cartiers de 1\/8<\/p>\n\n\n\n<ul><li>caramel dans la po\u00eale (diam\u00e8tre haut ext\u00e9rieur 28-30cm) chaude sur 7 : cuire 50g de beurre + 50g de sucre + 1 cuill\u00e8re \u00e0 soupe d&rsquo;eau, m\u00e9langer de temps en temps, environ 10 mn, pour avoir une couleur brune sans bruler.<\/li><li>Dans cette po\u00eale, \u00e9taler les quartiers de pomme serr\u00e9s, sur le caramel, saupoudrer 50g de sucre + 50g de beurre + cannelle, faire cuire 15mn, sans couvercle.<\/li><li>pr\u00e9chauffage du four 200\u00b0 chaleur tournante.<\/li><li>sortir la po\u00eale du feu et \u00e9taler la pate sur la po\u00eale, former une bordure avec la pate en l&rsquo;enfon\u00e7ant avec un manche de couteau, percer 4 chemin\u00e9es.<\/li><li>Enfourner et cuire 25mn \u00e0 200\u00b0<\/li><li>sortir la po\u00eale et attendre que le jus coagule. (2 \u00e0 4mn)<\/li><li> Placer un plat retourn\u00e9 sur la po\u00eale avec le manche dans la main droite, et la main gauche sur le plat.
