Ajoutez la \u00bd du beurre et versez le riz. Laissez le cuire en m\u00e9langeant jusqu\u2019\u00e0 ce qu\u2019il devienne translucide.&nbsp;<\/p>\n\n\n\n<p>Pr\u00e9parez le bouillon<\/p>\n\n\n\n<p>Versez le vin sur le riz. Une fois absorb\u00e9, versez le bouillon louche par louche en m\u00e9langeant et en laissant le riz l\u2019absorber. Cela dure environ 30 minutes. Ajoutez les ch\u00e2taignes, le reste du beurre, le poivre et incorporer le parmesan. Ajouter les poires en remuant d\u00e9licatement pour ne pas les casser.
